La Chablisienne is a wine cooperative founded in 1923 which today gathers 300 winemakers. Production of the entire vineyard reaches 250,000 hectoliters annually, which is 25% of the total A.O.C. Chablis.
A bright and clean wine with a pale golden color with green reflections. The nose is strong and composed with notes of acacia, jasmine and fresh mint blossoms, notes of green apple, lemon, lime, smell of sea air, nuances of spices. The palate is full and spicy - the taste of roasted coffee and spicy spices. A long, mineral and citrus finish with a hint of caramel, almonds, dried fruits and peppers. Well balanced. The fruits come from 40-year-old bushes, are collected by hand into small boxes. The wine matures for 20 months in French oak barrels and 50% in small steel vats.
