Rocca delle Macie created the first bottle of Roccato in 1988. This wine has so far been based in equal parts on the Sangiovese and Cabernet Sauvignon strains, which are carefully selected, separately subjected to the process of vinification, then also separately matured in French oak barrels for a period of 9 to 14 months. After this time, a bunch of grapes is grown, which ripen together for three months in an oak barrel, and then for a year in a bottle. Roccato represents the meeting of the most typical roots of Sangiovese with modernity symbolized by Cabernet.
Filling the mouth, a velvety wine with a deep ruby color and pomegranate reflections. Rich in aromas of blackberries, plums and licorice, with subtle notes of cocoa, vanilla and coffee. Warm and balanced on the palate with a coherent structure of tannins that support the long finish of the wine. Roccato has a good mineral and tanning structure that provides the potential for long-term aging, up to 20 years. It goes well with heavy sauces, meats, venison dishes and hard cheeses.
