Shiraz grapes arrived at the vineyard early in the morning, right after the mechanical gathering.
The grapes were separated from the stems and after a gentle grinding, the mousse was transferred with skins and seeds to stainless steel tanks to start the fermentation, which lasted 7 days at 25 ° C.
After alcoholic fermentation, the wine was transferred to a storage tank, and the skins were gently squeezed into the same tank using a pneumatic press to start malolactic fermentation. This is to stabilize and soften the wine. The wine matured in French and American oak for 5 months.
