Strong red wine characterized by an aromatic and magical combination of cherries and strawberries and a delicate tobacco aroma and pine needles. Merlot Essence combines two vineyards that perfectly complement each other. The main vineyard, in the Elah Valley, offers velvet softness, and the second, in the Ephraim Hills, contributes to a solid wine structure. After alcoholic fermentation, the wine is soaked in peel for about 5 days. After the extended maceration, the grapes are slowly squeezed under low pressure into a stainless steel container for malolactic fermentation, which stabilizes and softens the wine (this process takes place separately for each vineyard). After malolactic fermentation, the wine begins its 18-month maturation process in new and two-year-old French oak barrels. During the ripening, all the barrels are tasted, and the final mix is intended to reflect the proper composition of both vineyards in the final wine. After the ripening process, the wine is bottled and continues to mature for the next 10 months before release.
