After fermentation, the grapes are gently pressed in a pneumatic press and transferred to an insulated stainless steel tank to start a natural malolactic fermentation, which is a fermentation process aimed at stabilizing and softening the wine. After malolactic fermentation, the wine is transferred to French oak barrels and matured for six months.
