A white blend of Viognier, Sauvignon Blanc and French Colombard, combines rich flavors and elegant finesse. This charming wine is spicy and fresh, filled with the aromas of lemon and apple. It has a thrilling acidity and a delicate finish.
After the night harvest, Viognier grapes arrive in the vineyard early in the morning. They are immediately and delicately pressed to preserve high quality fruit and prevent oxidation.
After pressing, the must is transferred to the cooled containers. After the decanting of the must, the yeast is added and fermentation begins, which lasts two to three weeks at low temperature to preserve the aroma of the wine. To develop the aromatic profile and widen the wine palate, 30% of the wine was aged in French oak barrels for four months. The rest of the wine was left in stainless steel tanks.
Sauvignon Blanc and French Colombard grapes are harvested at a later date and then subjected to a similar process. Finally, a few tasters in wine-making tasting decide on the final wine mix - 60% Viognier, 25% Sauvignon Blanc, 15% French Colombard. Wine is not malolactic fermented to preserve fresh properties.
