Sensuale Grillo

Pale lemon color with green reflections, at the nose presents a refined bouquet with fragrant lime scents, white peach, grapefruits and hints of Passion fruit and tarragon. Grapes come from Sambuca di Sicilia, a small village in the province of Agrigento, on the steep slopes of hilly area overlooking the Arancio lake. Vineyards are at 400-500 m asl facing South-East and grow on 100% limestone soil. Vineyard is 15-20 years old.

Fermentation in stainless steel at 12° C for 20- 25 days, addiction of selected dry yeast (extreme reductive environment). Aging in stainless- steel tank with regular fine lees stirring before release.

Excellent with oysters, caviar and crabs. highly recommended with fish soup, light risotto, cous cous and fresh cheese. Great with smocked fish.
