Cava - sparkling wine produced by the "champagne" or "traditional" method in the Penedes region, in the northern part of Spain. It is the only sparkling wine distinguished by the DO (denominación de origen) category - a controlled place of origin. The name "Cava" comes from the Catalan word for the cellar where the wine is kept. More and more fashionable for many years, the pink variety is produced either from Pinot Noir or from the regional variety of red grapevines - Trepat.
