Hearing the name Pecorino, we can often think that we are dealing with a popular and well-known variety of cheese. This is because Pecorino is a relatively recently discovered grape variety. After pressing and then soft pressing, the grapes mature in as much as 20% in small oak barrels. This is where the great complexity effect comes from.
