Tommasi produces the Ripasso in San Pietro in Cariano Veneto, from Corvina Veronese, Corvino and Rondinella grapes. The grapes are fermented at 26-28 ° C in stainless steel tanks for nine days. The juice is then sent back to the skins of the Amarone grapes using the "Ripasso" method. After fermentation, the wine is matured for 15 months in 65-hectolitre stuffing box barrels. Before dispensing, the wine is aged for another six months in the bottle.
