Amarone is made from three grape varieties - Corvina Veronese, Corvinone Veronese and Rondinella. Harvesting is done by hand at the end of October. Each bunch undergoes a careful selection because only perfect bunches, without disease and cracks, are used to produce this wine. After harvesting, the bunches are dried on mats for a minimum of 100 days - thanks to this they lose unnecessary water and only then the normal production process takes place. Thanks to this drying of the grapes, the taste and aroma of Amarone wines is unique.
